Description

This recipe came from our favorite 1st grade teacher. These are delicious and disappear quickly!

Ingredients

  • 1-½ cup Flour
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Mashed (very Ripe) Bananas
  • ⅓ cups Shortening
  • ½ cups Buttermilk (See Note)
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • ½ cups Chocolate Chips

Preparation

In a large bowl, stir together flour, sugar, baking powder, baking soda, and salt. Add mashed bananas, shortening, half of the buttermilk, and vanilla. Stir until thoroughly combined. Add the remaining buttermilk and egg. Stir. Add chocolate chips. Spray a muffin pan or use foil liners. Fill 2/3 full and sprinkle a little sugar on top. Bake at 375F for 25 minutes.

Note: To make your own buttermilk, add 2 teaspoons of lemon juice or vinegar to 1/2 cup of milk. Stir and let stand for 10 minutes.

These were delicious! I had only 1 banana so I added 1/2 c. of applesauce. My hubby loved them, will definitely make again.
