These Surprise Muffins were almost classified as lost until recently when they were discovered tucked away in an old cookbook. Use any flavor of fruit preserves—that makes it a fun surprise.
Preheat oven to 400ºF. Line a 12-muffin pan with paper liners or spray pan with cooking oil.
Stir together flour, sugar, baking powder and salt. Set aside.
In a large bowl, combine corn flakes and milk. Let rest 2-3 minutes.
Add egg and oil to corn flake mixture, beating well. Add flour mixture, stirring until just moistened.
Portion half of the batter evenly into prepared muffin pan or muffin papers. Put 1 teaspoon fruit preserves of choice on top of each muffin batter. Evenly distribute remaining batter to each muffin, covering preserves.
Bake at 400ºF about 18 minutes or until golden brown. Serve warm with cream cheese, butter or honey.
