My new favorite banana bread.
Preheat oven to 350 F. Spray two 8×4-inch loaf pans with cooking spray. Set them aside.
In a medium bowl, mix together the flour, baking soda and salt.
In a separate bowl mix together the bananas, sugar, oil, eggs and vanilla using a mixer on medium speed. Add the flour mixture and mix on low until just combined. Fold in the walnuts.
Divide the mixture into the two pans. Bake for 40 minutes, or until a toothpick inserted into the middle comes out clean.
