Description

A delicious blend of fruit and citrus flavors!

Ingredients

  • 2 cups Whole Wheat Flour
  • 1 teaspoon Sea Salt
  • 1 teaspoon Baking Soda
  • 2 whole Eggs
  • ½ cups Granulated Sugar
  • ½ cups Brown Sugar
  • ½ cups Melted Butter
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Orange Extract
  • 1 teaspoon Lemon Juice
  • 1-¼ cup Greek Yogurt, Vanilla Flavored
  • 1-½ cup Chopped Fresh Strawberries
  • 4 Tablespoons Orange Juice
  • 2 cups Powdered Sugar

Preparation

Preheat your oven to 400 degrees and grease your muffin pan. Or if you use liners that is fine too.

In a large bowl, combine the flour, salt and baking soda.

Mix gently, set aside.

With a mixer, beat the eggs on medium-low and gradually add in sugars. Then slowly add in the butter, extracts and lemon juice

Into the creamed mixture, alternately add in the flour and yogurt until all is combined and then gently fold in the strawberries.

Scoop into muffin cups and bake for about 20 minutes.

For the glaze I mixed 4 tablespoons orange juice and 2 cups powdered sugar and poured it on the muffins after they were a little cooled.

*My two year old gobbled up two of these muffins!

I’ve a question about the strawberries – are they meant to be chopped up, or added whole? I chopped mine, so the muffins are moister than usual on the inside. Still tastes great, though! Would love to bake them ‘properly’ next time, with more info available. Thanks
