Description

Strawberry muffins.

Ingredients

  • 1 cup White Whole Wheat Flour
  • 1 cup All-purpose Flour
  • ¼ cups White Sugar
  • ¼ cups Brown Sugar
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • 1 dash Cinnamon
  • 1 whole Egg
  • ⅓ cups Oil
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla Extract
  • 1 cup Chopped Strawberries
  • ¼ cups Brown Sugar (for Streusel)
  • 2 Tablespoons Flour (for Streusel)
  • 2 Tablespoons Butter, Cold And Cubed (for Streusel)

Preparation

Preheat oven to 375F

Spray muffin pan with cooking spray and set aside.

In a large bowl, whisk flours, sugars, baking powder, baking soda, salt and cinnamon.

In a small bowl, lightly beat egg, oil, buttermilk and vanilla.

Pour wet mixture into dry and with a wooden spoon mix until incorporated. Fold in chopped strawberries until distributed. Spoon batter into muffin pan, filling each 2/3 the way full.

Sprinkle with streusel topping (instructions below).

Bake for 25 minutes.

For the streusel topping: In a small bowl combine sugar and flour. Using a fork mash butter into mixture, until chunky consistency is reached. Place in the freezer for a few minutes before using to top muffins.

These were so easy to make and delicious. They are not too heavy and the topping gives them a nice crisp top. My daughter ate 5 for breakfast! This is a keeper.

I love the use of white whole wheat flour and fresh strawberries. Also, they don’t have as much sugar compared to other muffins, but you’ll never miss it with the streusel topping. Very easy to make as well.
