Description

This bread is moist and so pretty! Makes a great gift for a teacher. The side of homemade cream cheese spread makes it over-the-top AMAZING!

Ingredients

  • 2 cups Sugar
  • 4 whole Eggs
  • 1 teaspoon Salt
  • 3 cups Flour (We Use White Wheat Flour, It's Healthier)
  • 1 cup Olive Oil (not Extra Virgin)
  • 1 teaspoon Baking Soda
  • 2 packages (10 Oz. Package) Frozen Strawberries, Thawed (Save Juice)
  • 8 ounces, weight Cream Cheese, Softened

Preparation

Mix sugar, eggs, salt, flour, oil, and baking soda together. Drain thawed strawberries, reserving 1/2 cup of the strawberry juice. Then add the thawed and drained strawberries into the batter, mix well.

Bake in 2 loaf pans for 30-45 minutes at 350F. Check for doneness with a toothpick.

Mix the reserved strawberry juice with the softened cream cheese and serve with warm bread. Yum!
