These Strawberry Banana Oatmeal Muffins are soft, moist and flavorful much like a warm bowl of oatmeal, only baked with your favorite toppings already in it!
Preheat oven to 350ºF. Spray a muffin pan with cooking spray and set aside.
Add all the ingredients to the blender cup and work it for about 1 minute on low, going up to low-medium speed. Stop right away when the ingredients are fully combined. The goal is to keep the shape of the oats as much as possible.
Pour batter into a muffin pan, no muffin liners needed! Bake for 17–18 minutes or until an inserted toothpick comes out clean.
Top with fresh berries, confectioning sugar and serve. Keep remaining muffins refrigerated for up to 3 days.
