A very moist, very tasty quick bread that takes advantage of strawberry pickin’ season!
Wash and slice strawberries, place 1 lb in a sauce pot, set the other 1/2 lb aside. Add sugar and vanilla to pot, heat til simmering.
While berries are heating up, prepare bread mix as directed. I love the Krusteaz one because you only need water (no eggs or oil = less fat). I use a tad less water than called for since the strawberries will add moisture.
Using a masher or whisk, stir up the simmering berries. Remove from heat, add remaining sliced berries and stir gently.
Pour 1/2 bread batter into loaf pan, pour about 1 cup of strawberry sauce over bread, then top with remaining batter.
Bake bread as instructed on package.
This bread is yummy for breakfast, dessert, a snack – any excuse! Top with extra strawberry sauce if desired.
