Description

A nicely spiced pumpkin muffin enhanced with a burst of chocolate. Perfect for a cool fall morning breakfast.

Ingredients

  • ¾ cups Granulated Sugar
  • 2 whole Eggs
  • ¼ cups Vegetable Oil
  • ¾ cups Canned Pumpkin
  • ¼ cups Water
  • 1-½ cup Whole Wheat Flour
  • ¾ teaspoons Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Cloves
  • ¾ teaspoons Cinnamon
  • ¼ teaspoons Ground Ginger
  • ¼ teaspoons Ground Nutmeg
  • ½ cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 400 degrees F. Line your muffin tin with paper liners or grease and flour.

Mix your sugar, eggs and oil together in a bowl and then add in the pumpkin and water.

In a separate bowl, mix together flour, baking powder, baking soda, salt and spices together. Add to the wet ingredients and chocolate chips and stir until just combined.

Dose the batter into muffin cups and bake about 15 minutes.

*Please note, I prefer to use King Arthur Flour’s White Whole Wheat Flour for this recipe. It still has the whole grain factor, but it a bit lighter to work with.

My family all loved these. I have three picky boys all with different tastes and the all begged for more of these. They are great to send along in school lunches. I live where I can’t get canned pumpkin so just steamed some fresh pumpkin and mashed it and it worked beautifully.

I have made these countless times – very tasty! My husband loves them with his morning coffee. I substitute walnuts for the chocolate chips because I need a little crunch in my muffins and it saves a few calories. Thanks for the good recipe!

Yum! I was craving a pumpkin recipe last night and had everything (except for the cloves) to whip these up. They turned out great – very moist, and still taste great this morning. I didn’t think they were too sweet, it was a very nice balance of the chocolate in the muffin.

(One note: I didn’t have the King Arthur’s brand of whole wheat flour – I had Trader Joe’s. So I substituted half of it with all-purpose flour.)

This is a great recipe! Everyone here loves it! Very yummy!

One minor change-I will likely decrease the amount of chocolate chips next time (this from someone who loves chocolate and usually adds more than suggested!). This batter is sweet and doesn’t need a lot of additional sweetness.
