I’ve traveled far and wide in search of the perfect cornbread with is the quintessential accompaniment to barbecue. I think you will like this version which is cooked in an iron skillet.
Preheat oven to 400ºF.
Beat eggs and then mix in oil and buttermilk.
Combine the dry ingredients in a bowl. Gradually mix the wet ingredients into dry ingredients. Pour into sheet pan or preheated cast iron skillet.
Bake in 400ºF oven for 20-25 minutes. Remove when an inserted toothpick comes out clean.

I LOVE cornbread..!! and baking in cast iron will make a beautiful crust…..this has a lot more sugar than my normal version but I can’t wait to try it out !
