A simple, moist apple bread topped with a dusting of cinnamon sugar for the perfect afternoon or morning treat.
1. Preheat oven to 350ºF.
2. Grease a 9×5 loaf pan with butter.
3. Beat the brown sugar and butter together with an electric mixer or a fork and a strong arm. Add eggs and beat until combined.
4. Mix in the flour, cinnamon and baking powder, then the almond milk. Stir. Fold in the shredded apples.
5. Pour the batter into the loaf pan and bake for 50–55 minutes or until a toothpick inserted in the center comes out clean. With 2 minutes remaining, mix the sugar and cinnamon together for the topping. Sprinkle over the top. Bake for the remaining 2 minutes.
6. Remove from oven and let cool on a rack about 10 minutes before removing from pan and slicing.
