Description

Delicious, easy-to-make morning muffins. Cheese, bacon, chives—how does it get better?

Ingredients

  • 2 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 2 teaspoons White Sugar
  • 1 teaspoon Dry Mustard Powder
  • ¾ teaspoons Salt
  • 1-¼ cup Shredded Cheese, Preferrably Something Sharp, Like An Italian Blend Or Aged Cheddar
  • ⅓ cups Bacon, Cooked And Crumbled
  • 1 cup Milk
  • ¾ cups Cooking Oil
  • ½ cups Chives Or Green Onion, Finely Chopped
  • 2 whole Eggs
  • 1 teaspoon Corn Syrup

Preparation

In one bowl, combine flour, baking powder, white sugar, mustard powder, salt, 1 cup cheese, and bacon. In another bowl, combine the milk, oil, chives, eggs, and corn syrup. Pour wet ingredients into dry and stir until just combined.

Divide evenly between paper-lined muffins tins. Bake in a 400 F oven for approximately 20 minutes. Sprinkle with remaining 1/4 cup cheese while still hot.

So good! Made one change in that I replaced a tablespoon of milk with a tablespoon of hot sauce.

These were exactly what you claim. I made them last night with mashed potatoes and meat loaf. They paired wonderfully. I kept the left overs for breakfast this morning. Yumm! Very dense and filling.
