Description

Coconut, pineapple and cake mix … heavenly! This recipe is great. So quick and easy and the muffins are great for breakfast, dessert or a snack!

Ingredients

  • 1 package (18.25 Oz. Size) Yellow Cake Mix
  • ½ cups Butter, Softened
  • 1 can (8 Oz. Can) Crushed Pineapple, Drained
  • ⅔ cups Water
  • 3 whole Eggs
  • 1 cup Flaked Coconut
  • 1 cup Chopped Nuts (optional)
  • 1 teaspoon Rum Extract
  • 1 teaspoon Coconut Extract

Preparation

Preheat oven to 350ºF.

In a large mixing bowl, beat the cake mix and butter. Add remaining ingredients and mix until well blended.

Prepare a muffin pan, either with muffin cups or with muffin liners. Fill each muffin cup halfway full.

Bake for 20 to 25 minutes.
