Description

Stunning pumpkin-spiced Fall muffins with delicious Nutella swirl baked in. The Nutella gives the top a delightful crispiness and chewiness. Helpful photos of the swirl effect in the related blog post.

Ingredients

  • 1 cup Canned Pumpkin Puree
  • 1-½ cup Sugar
  • 2 whole Eggs
  • ½ cups Canola Oil
  • ⅓ cups Water
  • 1 teaspoon Vanilla
  • 1-¾ cup Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 3 teaspoons Pumpkin Pie Spice
  • ⅓ cups Nutella

Preparation

Preheat oven to 350 F. Line a 12-count standard muffin pan with baking cups.

In a mixing bowl, whisk together the pumpkin, sugar, eggs, oil, water, and vanilla until well-combined. In another bowl, mix together the flour, baking soda, salt, and pumpkin pie spice. Incorporate the dry ingredients into the wet ingredients, mixing until smooth. Pour batter into the baking cups, filling about 2/3-3/4 full.

Put the Nutella into a microwave-safe bowl and microwave for 20-30 seconds or until it thins out just enough to swirl. Using a teaspoon, drop a spoonful or two of Nutella onto the top of each muffin and swirl it with a knife.

Bake for 25-30 minutes or until set. Best served warm.
