Description

Amazing moist pumkin muffins – perfect for fall!

Ingredients

  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • 1 cup Sugar
  • 1 cup Pumpkin, Canned
  • ¼ cups Butter, Softened
  • ½ cups Milk
  • 2 whole Eggs
  • 1 cup Chopped Nuts (optional)

Preparation

Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg and sugar, set aside.

Combine pumpkin, butter, milk and eggs.

Gently add pumpkin mixture to flour mixture, just until combined. Fold in nuts, if desired.

Bake in a greased muffin tin at 350 degrees for 20-25 minutes or until toothpick inserted in center comes out clean.

This recipe can also be made as bread in a loaf pan. In this case cook for 1 hour.

I just made these; my kitchen smells fantastic and my stomach is happy! I doubled the recipe to make 24 good-sized muffins, and couldn’t restrain myself from sprinkling them with cinnamon and sugar when they came out of the oven. Half are going in the freezer — if I don’t eat them all before then.
