A delicious quick bread that will remind you of going home for the holidays.
In a large mixing bowl, combine eggs, sugar and oil beat until smooth. Add water and pumpkin and mix until blended.
In a medium-sized bowl, combine flour, soda, salt, baking powder, and spices. Slowly add dry ingredients to the pumpkin mixture until all ingredients are mixed. Divide batter and spoon into two buttered loaf pans. Sprinkle tops of bread with turbinado sugar.
Bake at 350 degrees for 45 minutes.

Perfect! I can’t stop eating it! For breakfast, snack, dessert… I made lots of mini loaves to give away through the holidays and had some left over. I got lots of compliments from friends and family about how moist this bread was! So delicious too! Will make again! In fact, I’ll be adding it to my blog soon. I’ll come back and post the link!

This is SO GOOD!!! It’s a new family favorite and I’ve only made it twice! The first time, I wanted to make mini-muffins but wasn’t sure how they’d turn out (with 4 kids, mini muffins are easier). The 2 loaves I made were PERFECT, but the mini muffins were too sticky. So, the second time I made it, I decided to add some extra flour. It worked, the mini muffins were not sticky at all, but 1/2 cup is too much extra flour. Maybe 1/4 cup at the most would be sufficient. But this bread is so extremely delicious that it gets finished in one day. Thank you for sharing this recipe!
