Description

I found this recipe in an old church cookbook. But these yummy muffins aren’t just for the fall! Enjoy them all year long.

Ingredients

  • 4 whole Eggs
  • 2 cups Sugar
  • 15 ounces, weight Canned Pumpkin
  • 1-½ cup Oil
  • 3 cups Flour
  • 2 teaspoons Baking Soda
  • ¾ teaspoons Baking Powder
  • 1 Tablespoon Cinnamon
  • ¾ teaspoons Salt
  • 2 cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 400ºF. Beat eggs. Add sugar, pumpkin, and oil; mix well. Add dry ingredients and mix well. Stir in chocolate chips. Bake in paper-lined muffin tins for 15-18 minutes. Makes 2 1/2 dozen muffins.

Pretty easy to make and yummy fresh out of the oven. I halved the recipe and used half oil half low fat sour cream. They turned out great!
