Pumpkin muffins with semi-sweet chocolate chips.
In a large mixing bowl, combine sugar, pumpkin, oil, water, and eggs; beat well. Combine dry ingredients; gradually add to pumpkin mixture and mix well. Stir in chocolate chips.
Line a muffin tin with paper liners and fill halfway. Bake in a preheated 350-degree oven for 12 to 15 minutes. Insert a toothpick to check for doneness. If it comes out clean, then it is done. Remove to a wire rack and cool.
This recipe should make 24 muffins.

Was looking forward to having a muffin with coffee for breakfast … left them on the rack to cool late last night. The golden retriever decided to be generous and left ONE behind. If that’s not an endorsement, I don’t know what is. LOL

My daughter loves pumpkin chocolate chip muffins and so when I saw this recipe, I printed it out for her. She is beginning to cook (she’s 13) and I thought this would be a good one for her to try. She made up a batch of them all on her own, with only a little help putting the muffin pan in and out of the oven (she’s still a little timid regarding the hot oven rack).
We just had a warm muffin not long out of the oven, and they are delicious! Will be looking forward to trying another tomorrow after they’ve cooled. Very moist and tasty.
