Description

This is more like a coffee cake than a bread, but if I can eat something sweet for breakfast—woohoo!

Perfect for St. Patrick’s Day … or Easter … or anytime!

Ingredients

  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 2 packages (3.4 Oz. Box) Instant Pistachio Pudding Mix
  • 4 whole Eggs
  • ¼ cups Oil
  • ⅛ cups Water (Optional, But I Always Add It)
  • 1 cup Sour Cream
  • ½ cups Pecans (optional)
  • Cinnamon Sugar Mixture, To Sprinkle

Preparation

Mix all ingredients together on low with an electric mixer. The mixture will be very thick and sticky. Grease the bottom of two loaf pans, then sprinkle them with cinnamon and sugar. Divide the batter between the two pans. Top with cinnamon and sugar again.

Bake at 350 degrees for 45 minutes or until a toothpick inserted near the center comes out clean.

You can also do this in one bundt pan or in mini loaf pans or cupcake liners; bake until they’re golden and cooked in the center.
