This won me third place in a local Home Baking Cooking Competition back in 2015. I think the addition of the pineapple won the judges over in this unique twist on your everyday Banana Bread!
In a stand mixer with paddle attachment, cream butter and sugar. Beat in eggs. Stir in banana, pineapple and coconut.
Combine dry ingredients; stir into creamed mixture just until combined. Spoon into a greased 8×4 inch loaf pan.
Bake at 350ºF for 65 minutes or until bread tests done. Cool in pan 10 minutes then remove to a wire rack.
