Description

Like having pecan pie for breakfast!

Ingredients

  • 1 cup Pecans
  • 1 cup Packed Brown Sugar
  • ½ cups Flour
  • 2 whole Eggs
  • ½ cups Butter, Melted
  • ¼ teaspoons Vanilla

Preparation

Mix pecans, brown sugar, and flour in a bowl, Beat eggs until foamy and stir in butter and vanilla, Add this mixture to the dry mixture. Stir until moist. Bake at 350ºF for 20-25 minutes. I use the mini-muffin pan (makes 24). These don’t rise, so don’t think you’ve done something wrong! They taste just like pecan pie!

Made the recipe as is and it was wonderful! If you dump the muffins out onto a cooling rack or straight onto your counter, the sides and bottoms get nice and crispy from the brown sugar as it cools.
