Like having pecan pie for breakfast!
Mix pecans, brown sugar, and flour in a bowl, Beat eggs until foamy and stir in butter and vanilla, Add this mixture to the dry mixture. Stir until moist. Bake at 350ºF for 20-25 minutes. I use the mini-muffin pan (makes 24). These don’t rise, so don’t think you’ve done something wrong! They taste just like pecan pie!
