Pao de Queijo is a quintessential part of every Brazilian diet. These cheesy bread balls are customarily eaten for breakfast or “lanchinho da tarde” (afternoon tea). They are best served warm alongside tea or coffee and many like putting a pat of butter or jam inside. They are so simple to make and are easily customizable by using different types of cheeses or spices.
Preheat oven to 350-375ºF Grease 2 baking sheets (your hands might be too messy to do this later).
In a saucepan bring the milk, water, oil and salt to a boil.
In a wide bowl place the tapioca flour. When the liquid mixture comes to a boil immediately pour it over the tapioca flour and mix with a spoon. You will see that the tapioca flour starts to gel or become doughy. This is good because you want the dough to be pliable. Keep mixing with a spoon until the dough has cooled enough for you to start kneading with your hands. Knead the dough until everything is well combined and slightly cooled.
Add the eggs. I generally add in one egg at a time and then knead it into the dough and repeat. Add the grated Parmesan cheese and knead until well combined.
Grab a spoon and start forming the dough into 1-2” balls and placing them on your greased baking sheets. Make the balls the same size for even baking. If the dough starts to stick to your hands put some vegetable oil on your hands.
Bake for 20-25 minutes or until golden brown. Remove from oven and enjoy!
