Description

Delicate, beautiful muffins flavored with dried orange peel. Absolutely wonderful!

Ingredients

  • FOR THE MUFFINS:
  • 2 cups Bread Flour
  • ½ cups Sugar
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Salt
  • 2 whole Eggs, Beaten
  • ½ cups Milk
  • ½ cups Oil
  • 1 Tablespoon Dried Grated Orange Peel
  • FOR THE TOPPING:
  • ⅓ cups Sugar
  • 1 teaspoon Orange Juice
  • 1 teaspoon Dried Grated Orange Peel
  • 2 Tablespoons Butter, Melted

Preparation

Combine the flour, sugar, baking powder and salt in a mixing bowl. Set aside.

Combine the eggs, milk, oil and 1 Tablespoon of orange rind in a liquid measuring cup. Make a well in the center of the dry ingredients, and add the eggs/milk mixture.

Gently stir with a fork just until combined. The batter will be thick. Fill greased muffin cups about 3/4 cup full. You should be able to fill about 9 regular sized muffin cups.

Now it’s time for the topping. To make it, mix together the 1/3 cup sugar, 1 teaspoon grated orange rind and 1 teaspoon orange juice.

Take the melted butter and dab it onto the tops of the unbaked muffins with a pastry brush. Sprinkle the topping over the melted butter.

Bake at 400F for 15 minutes, maybe 20. Watch these because if they’re overbaked, the sugar can burn. When a toothpick inserted into the center of the muffin comes out clean, they’re done.

Cool on wire racks, and store loosely covered. They’re really best on the day they’re made.
