These Oatmeal Chocolate Chip Muffins are a naturally-flavored warm delight.
Preheat oven 400ºF.
Place muffin wrappers in a muffin pan or grease lightly. In a large mixing bowl, mix butter, milk, egg, and vanilla. Add oatmeal, mix and let stand for 10 minutes. In a separate mixing bowl, combine flour, turbinado, baking powder, and salt. Pour the wet ingredients into the dry ingredients, mix until just combined. Fold in chocolate chips.
Fill muffin cups 3/4 of the way with batter. Bake for 20 minutes.
Makes 12 muffins.
