Easy peasy substitute for toast with your morning eggs and bacon.
Cream together butter and sugar. Add beaten egg, dry ingredients and milk. Mix together until batter is no longer lumpy.
Pour batter into prepared (I use Baker’s Joy spray) muffin tins about 3/4 full. You will get 6-8 muffins, depending on the size of tin you use.
Bake at 375 degrees for 25 minutes. The center of the muffin will be a “mountain.”
Butter, jam and you’re in business! If any are left over, they are delicious cut in half and toasted with butter.
