Description

If you are having a special get-together or holiday breakfast, you have gotta make this coffee cake!

Ingredients

  • FOR THE CAKE:
  • 2 cups All-purpose Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • ¾ cups White Sugar
  • 2 Tablespoons Cold Butter
  • 1 cup Milk
  • FOR THE TOPPING:
  • 2 Tablespoons Melted Butter
  • ½ teaspoons Ground Cinnamon
  • 3 Tablespoons Brown Sugar
  • ¾ cups Reserved Dry Ingredients From Cake Mixture

Preparation

For the Cake:
In a mixer or food processor, combine flour, baking powder, salt, sugar and cold butter. Reserve 3/4 cup of this mixture for the topping. Add 1 cup of milk to the remaining cake mixture and mix until smooth. *You don’t want to over mix because then the cake will be tough!*

Pour the batter into a greased 8×8 baking dish.

For the Topping:
Combine the melted butter, cinnamon, brown sugar and the 3/4 cup of reserved cake mixture. Mix well and sprinkle on top of the cake batter.

Bake for 30-35 minutes at 350 degrees F until slightly golden brown and the toothpick comes out clean. Enjoy!

I make this to bring into work and it was devoured! It is super easy to make and travels well. I think I could eat the topping by itself with a spoon…

Very easy. I love that it contains simple ingredients (and bonus, no eggs since I was running short this morning) and goes together very fast. I used a large loaf pan instead and had to bake it a little longer.
