Description

I absolutely love these muffins. They make a great snack or breakfast. Even my “non-diabetic” husband loves them!

Ingredients

  • 1 cup Bran Cereal (I Use All Bran)
  • ½ cups Egg Substitute
  • ½ cups Skim Milk
  • ⅓ cups Applesauce (unsweetened)
  • 2 whole Bananas Mashed (if Small Use 3)
  • 1 cup Whole Wheat Flour (I Love King Arthur's)
  • ½ cups Quick Or Old Fashioned Oats
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 Tablespoon Honey (Local Honey Is The Best)
  • 2 Tablespoons Molasses
  • 1 teaspoon Cinnamon
  • 1 cup Blueberries, Fresh Or Frozen

Preparation

Preheat oven to 400 degrees. Prepare 12 muffin cups in whatever manner you choose, either spray with cooking spray or line with paper liners.

Combine the cereal, egg substitute, milk, and applesauce and let stand 5 minutes. Add the rest of the ingredients, adding the blueberries last. Be gentle when stirring the blueberries in, you do not want to smash them into the batter. Spoon into the muffin cups and bake for 20 minutes.

Store in an airtight container in the refrigerator.
