These muffins have been my comfort food in the last few months. I often add wheat germ or flax meal or substitute chopped prunes for raisins.
In a large bowl mix flours, sugar, soda, and salt. Stir in the carrots, zucchini, raisins, nuts, coconut, and apple. Mix the eggs, applesauce, oil, and vanilla together. Stir into the flour mixture until batter is just combined. Spoon into greased muffin tins, filling to the top. Bake at 350F for 15 – 20 minutes, being careful not to over bake.
