Worth the effort. Create a new family tradition: Spudnuts on Sundays!
Scald milk; stir in shortening, sugar and mashed potatoes. Cool to lukewarm. Blend well.
Sprinkle yeast over warm water and stir until yeast is dissolved. Add to milk mixture.
Stir in beaten eggs and vanilla.
In separate bowl, combine flour, salt and baking soda.
Gradually add the flour- 1/2 cup at a time(13-14 cups), salt and baking powder to yeast mixture.
Knead the dough until soft. Place in a greased bowl, cover and let rise in warm place for 1 1/2 hours.
Roll out to 1/2 ” thickness on a floured surface. Cut with doughnut cutter. Place on waxed paper, cover with a cloth and let rise in a warm place until doubled, about 30 minutes.
Fry in 375 degree oil until brown, turning once. Drain on paper towels.
Frost with a thin icing of powdered sugar and milk, or dip in granulated sugar.
