This one bowl wonder is a snap to make and great with a cup of coffee.
Preheat oven to 350 F. Spray an 8 inch square baking pan with cooking spray. Set aside.
Place the butter in a large microwave safe bowl. Microwave for 1 minute on high. Then add sugar into the melted butter, stirring to combine. Add molasses and eggs and stir until smooth. Add ginger, pumpkin pie spice, baking soda and salt. Stir well. Add milk and flour and stir to just until combined. Pour batter into your prepared pan and smooth the top.
Bake for 30 minutes or until a wooden toothpick inserted in center comes out clean. Allow cake to cool for 10 minutes, then cut into squares. Dust powdered sugar on top or serve with whipped cream.
