Moist, delicious, and ready in a jiffy!
Preheat oven to 350 and grease 2 mini muffin pans.
Whisk together dry ingredients, then add 1/2 cup buttermilk, marmalade, and butter. Beat for about a minute, until the butter is well incorporated.
Beat the egg into the remaining 1/2 cup buttermilk, add to the muffin batter, and beat well for 30 seconds or so, until everything is incorporated.
Place rounded spoonfuls of batter almost to the rim of each bore, and bake for 10-12 minutes.
Mix together 2 Tbs. buttermilk, 2 Tbs. brown sugar, and 2 Tbs. marmalade to make a glaze, and slather on top of muffins when they come out of the oven. Yum!
