Description

This recipe gets help from a boxed muffin mix. They are tender and tasty.

Ingredients

  • 1 package Betty Crocker (18.25 Oz) Wild Blueberry Muffin Mix
  • 1 container (6 Oz) Yoplait Blueberry Greek Yogurt
  • 3 Tablespoons Canola Oil
  • 1 whole Egg
  • ¼ cups Water
  • ⅔ cups Powdered Sugar
  • 1 Tablespoon Water

Preparation

Drain and rinse the blueberries that come with your muffin mix and set aside.

In a bowl, combine muffin mix, yogurt, oil, egg and water just until combined. Fold in blueberries. Divide batter into 12 greased or lined muffin cups. (I used my Demarle mini bouquet tray to get the mini bundt shapes).

Bake at 400 degrees for 16-25 minutes until golden and tops spring back when touched. Cool.

Mix powdered sugar and water together to form an icing and drizzle over coffee cakes.

I made this Sat. It was good for breakfast on Sunday. I thought the little cakes were dry. I did find blueberry Greek Yogurt at Trader Joes.

I found Yoplait Greek Yogurt today in my grocery store! It’s a bit more expensive @ $1.15 for the 6 ounce container, but I was excited to see it. Now I can make these for my family.

I’ve never heard of Yoplait Blueberry Greek Yogurt. Where can I find this? Can it be substituted with a different kind of yogurt?
