Description

This is moist and convenient. It will fill a 1-gallon plastic container sold at Christmastime. It has a lid and is a perfect gift for friends that have unexpected guests.

Ingredients

  • 5 cups Flour, All Purpose
  • 15 ounces, weight Box Raisin Bran
  • 3 cups Sugar
  • 5 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 4 whole Eggs, Beaten
  • 1 cup Vegetable Oil
  • 4 cups Buttermilk

Preparation

Mix all ingredients together, store in the fridge. Mix can last up to 4-6 weeks.

To bake, fill muffin cups 2/3 full. Bake at 375 degrees F for 15-20 minutes.

My aunt always has this ready when we visit, it makes entertaining people last minute really easy for her, especially since they have house guests almost every weekend.

I made the batter last night, and woke up to fresh mufins this morning. Awesome. I substituted 1 box of All Bran instead, I am not a raisin lover, and the flavor was really good. I was a bit skeptical of the amount of baking soda, but it worked… Yeah! (I accidentally put too much in a recipe and it was gross…so now I have fears!)

I have given this recipe as gifts to many friends. It is so easy to throw together and wonderful to have on hand to make fresh warm muffins in the morning. I LOVE LOVE LOVE this recipe.
