A great diet muffin recipe that I got from a co-worker.
Preheat oven to 325ºF.
1. Mix all ingredients till moist.
2. Line a 12-muffin pan with foil cups.
3. Fill each cup to the top.
4. Bake 25-30 minutes.
Optional add-in suggestions:
1/4 cup chopped nuts
1 banana, mashed
1/4 cup of crushed pineapple (if you use pineapple, decrease applesauce by 1/4 cup)
