Kiwifruit is a national icon of New Zealand. Many know this fruit as Chinese gooseberries. Usually I will make plum muffins but, wanting to experiment, I used kiwi fruit. These muffins are tasty and easy to make. Kiwifruit is one of the best fruits for vitamin C, so these are really healthy for you. Give them a try.
Preheat oven to 200ºC (390ºF).
In a bowl, stir flour, baking powder, and sugar. In another bowl, add melted butter, egg and milk. Beat until well mixed, adding more milk as needed if the mixture is too thick.
Spray muffin liners with some oil and place muffin liners into muffin tin. Spoon into muffin liners filling 1/2 to 3/4 full. Place a slice of kiwifruit on top, lightly pressing them into the mixture.
Bake for 25–30 minutes until beginning to brown. Leave in tin on a cooling rack until cooled.
