Easy muffins swirled with your favorite jam. They make a great snack or breakfast on the go.
Preheat your oven to 325ºF with a rack in the middle position. Spray or line your muffin tins (recipe makes 18 standard sized muffins).
In a large bowl, whisk together the flour, baking powder, salt, and sugars.
In a small bowl, mix together the egg, milk, and vegetable oil.
Pour the milk mixture into the flour mixture and stir with a wooden spoon until just combined, with no flour left showing.
Add the jam and stir it in so that it swirls throughout the batter. Do not over mix.
Fill your muffin tins ¾ of the way full and bake for about 25 minutes. Be sure to keep your eye on them if you use mini muffin tins, as the time will be shorter.
