A simple, tasty quick bread made with lots of cheese and jalapenos. Goes perfect with a big bowl or chili or soup.
Heat oven to 350°F. Lightly grease a 9x5x3 loaf pan or 1 mini muffin pan with cooking spray.
In a medium bowl, stir together flours, cheese, baking powder, and salt. Add olive oil, egg and milk, stir till combined. Fold in jalapenos.
Pour into pan. Bake 30 to 45 minutes or until golden brown and a toothpick inserted in the center comes out clean. Cool 5 minutes; run knife around edges of pan to loosen. Remove from pan to wire rack. Cool 30 minutes before slicing, if you can wait that long (I didn’t).
