This is a very old recipe that requires no shortening and is made with the peel, but not the juice or pulp, of the oranges. The bread slices better if baked a day ahead.
1. Preheat oven to 350 degrees. Spray or grease a loaf pan.
2. Cut orange peel into slivers and cover with water. Add 1/2 cup sugar, simmer until tender. After removing peel, cook the liquid down to 1/3 cup, then return the peel to the liquid. Set aside.
3. Whisk together the flour, baking powder, salt and remaining 1/2 cup sugar.
4. Add enough milk to the orange syrup to make 2/3 cup; mix with the beaten egg.
5. Pour into the prepared loaf pan. Bake at 350 degrees for 45 minutes.
