Description

This is a moist, rather than crumbly bread. And it requires no kneading! Tastes great on its own, or toasted and buttered. Yum. My boyfriend loves the leftovers for breakfast.

Ingredients

  • 3 cups Flour
  • ⅔ cups Granulated Sugar
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1-½ cup Raisins
  • 2 whole Eggs
  • 2 cups Buttermilk
  • 2-½ Tablespoons Melted Butter, Cooled, Divided (if Using Salted Butter, Omit Salt)
  • 1-½ Tablespoon Caraway Seeds

Preparation

Preheat oven to 350ºF. Grease and flour 2 7-cup loaf pans or a 9-inch cake pan.

Sift flour, sugar, soda, baking powder, and salt if using. Add raisins and mix thoroughly. Beat eggs, then combine with buttermilk, 2 tablespoons of the melted butter and caraway seeds. Mix liquid and dry ingredients just until combined and pour into prepared pan. Drizzle remaining 1/2 tablespoon of melted butter on top.

Bake for 45–60 minutes, checking after 45 minutes by inserting a clean butter knife into the middle of the loaf. Knife should come out clean. Let cool completely before slicing.

I made this yesterday and it turned out beautifully (used a 9-inch cake pan)! It was moist with just a hint of sweetness (I used 1 cup raisins). I wasn’t sure about how it would taste with the caraway seeds but it was delicious. Great warm with unsalted butter. Thanks for posting!
