Description

What’s better than enjoying a thick cake donut that’s healthy? This recipe also serves as a great base for variations such as pumpkin spice donuts and cinnamon blueberry as well! (see the related blog post for more recipe variations).

Ingredients

  • FOR THE DONUTS:
  • 1 cup White Whole Wheat Flour
  • ½ cups Sugar
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 2 Tablespoons Pear Puree (or Applesauce)
  • ¼ cups Low Fat Vanilla Yogurt
  • ¼ cups Buttermilk
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 1 Tablespoon Milk

Preparation

1. Lightly grease a donut pan and preheat oven to 350ºF.
2. Sift all dry ingredients together in a large bowl. Add the pear puree and combine until the mixture resembles coarse crumbs.
3. Whisk together the yogurt, buttermilk, eggs and vanilla in a separate bowl. Make a well and add to the flour mixture. Stir until just incorporated.
4. Fill a Ziploc bag with the batter and cut a slit in the corner, about a half inch from the end. Pipe the batter into each cup about 1/2 to 2/3 full. Bake for about 10-12 minutes, until the donuts spring back when lightly touched.
5. For the glaze, combine sugar and milk. Add more milk as needed to reach desired consistency.
