This is a simple yet slightly strange bread, and pretty moist. It’s great with traditional ice cream flavors (strawberry, vanilla, chocolate) or even more “interesting” ice creams (like mint chocolate chip or cookie dough). Try it over and over again to see what you like!
Preheat oven to 375 degrees F.
Mix ice cream and flour together until thoroughly combined. (No flour should be visible in the batter.) Pour into an 8 3/4 loaf pan, making sure that there are no gaps or bubbles in the batter.
Bake for 40 minutes, until a toothpick inserted in the middle of the loaf comes out clean. Cool on a cooling rack. Slice and serve with the jam/jelly of your choice, or simple have it plain. The bread is more moist than regular bread.
Note: you will want to make sure you do not use light or extra creamy ice cream. They tend to have a consistency that does not bake well with the flour. The regular (fattening) ice cream works best.
