Description

These go amazing alongside fried catfish!

Ingredients

  • Oil, For Frying
  • 2 cups Cornmeal
  • 1 cup Flour (gluten Free All-purpose Flour Works)
  • ¼ cups Sugar
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Cayenne
  • 1 whole Egg
  • 1 can (15 Oz. Can) Cream Style Corn
  • 1 dash Salt To Taste
  • 1 dash Pepper To Taste

Preparation

Heat 2 inches of oil to 375 degrees in a large skillet. Mix all ingredients together and drop by tablespoonfuls into the oil. Cook until golden brown. Remove to a plate lined with paper towels to drain off excess oil. Makes about 3 dozen.

We tried this after failing with the recipe on the back of the corn meal. These are excellent!

I used a gluten free flour that had xantham gum already mixed in – I think it was by Hodgson Mills.

If you use gluten free flour, do you need xantham gum to stabilize?

I used GF flour and this is exactly the texture of hush puppy I hoped for – soft on the inside with a crisp coating. – really great corn flavor. This is now my go-to for hush puppies!
