A Southern favorite.
Heat one inch of vegetable oil in your deep fryer. Mix the rest of the ingredients together in a medium bowl.
When the oil is hot, drop the batter in by tablespoonfuls. Fry for about a minute, turning two or three times until golden brown.
Remove and set on paper towels to absorb the oil.
Serve hot!

I’ll admit right off that I was looking for more of a cakey hushpuppy, less cornbready (if that’s a word). They were easy to make and came out well, but I expected them to have more flavor. The addition of the onions (while small) made it seem like it was going to be a savory dish, but instead it tasted like plain fried cornbread. I would say maybe add some onion powder for a more concentrated flavor, or some fresh herbs, and a little more salt. I’ll definitely be trying again

Clabby, I’d try the link that tina59 posted, since I’ve never made it from scratch myself. Good luck!

For Clabby I looked up a link on ehow.com for Bisquick substitute.

@Clabby- I usually just use Bisquick, but this recipe looks about right.

These look delicious and I’d love to make them but we don’t have Biscuit Mix here in Ireland. Could I make it? What does it contain?
