A delicious alternative to the standard cornbread.
Mix cornmeal and baking powder together. Add boiling water till you achieve a pasty, thick consistency (note that you may not need all of the water).
Heat bacon grease in a skillet, preferably an iron skillet.
Form patties with the cornmeal mixture, put into the hot grease and fry till crispy and slightly brown. Place on paper towels when done cooking. The outside will be crispy while the inside is nice and tender. Serve with lots of butter!

Oh I LOVE hot water cornbread! I am printing this out as I type this! I am so glad I will be able to try this on my own.

My grandmother used to make this. We ate it with King Syrup – don’t even think you can buy that any more. I loved this cornbread as a kid. I had completely forgotten about it until seeing this recipe. Thanks for sharing! I’m going to try to make this and see if I can come close to the stuff my grand used to make.
