Description

After taking a bite of this perfectly sweet and moist honey yogurt bread, your taste buds will thank you and your waistline will be happy to know that it is low-fat, whole-wheat, and surprisingly healthy!

Ingredients

  • 2 cups Whole Wheat Pastry Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ½ cups White Sugar
  • ½ cups Honey
  • ¼ cups Extra Virgin Olive Oil
  • 1 whole Large Egg
  • ¾ cups Non-fat Plain Greek Yogurt
  • ¼ cups Fat Free Milk
  • 1 teaspoon Vanilla Extract
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Lemon Zest
  • Sesame Seeds

Preparation

Preheat oven to 350ºF.

1. Combine the flour, baking soda, baking powder, cinnamon, and salt in a medium bowl. Mix together and set aside.

2. With a hand mixer, in another medium bowl, combine the sugar, honey, and olive oil. Beat in the egg until well incorporated and mixture is smooth. Add yogurt, milk, vanilla, lemon juice, and lemon zest and mix until well combined.

3. Mixing on low, add the dry ingredients into the wet mixture in thirds until just combined. Make sure you do not over mix.

4. Pour into a lightly greased non-stick 9″x5″ loaf pan and spread the top to create an even layer. Sprinkle sesame seeds over the top and bake for 50-55 minutes until a toothpick or skewer comes out clean in the middle. Remove from loaf pan and place on cooling rack, let it sit for 2-4 minutes, and enjoy!

Love it! I used splenda rather than white sugar. Even my 7 yr old loved it. Eating it warm right now. Thanks for posting!

This didn’t turn out as moist as I’d hoped; and the cinnamon was a little overpowering.
