Healthy banana chocolate chip muffins are the best type of muffins! Clean recipe using no oil or refined sugar!
Preheat oven to 350ºF and grease muffin tin with coconut oil.
In a medium mixing bowl, mash bananas using a fork or potato masher. Add egg and vanilla and stir to combine. Set aside.
In a separate mixing bowl, combine spelt flour, cinnamon, baking soda, and kosher salt. Mix well. Add dry ingredients to wet ingredients and stir to combine. Do not over-mix. Fold in chocolate morsels.
Pour mix into prepared muffin pan, approximately ⅔ full. Bake for 20–25 minutes, or until a toothpick inserted comes out clean and tops are golden brown.
Remove and let cool on cooling rack.
