Pumpkin doesn’t have to only happen in the fall! These easy and healthy muffins are dense and delicious, with just the right amount of sweet and spice!
Preheat the oven to 375 F and line a 12-count muffin tin with muffin cups (recipe makes roughly 8 so you only need to line that many).
I’m all about the simple baking, so I just used one bowl. In a large bowl whisk together the pumpkin puree, sugar, egg and vanilla until smooth. Then just whisk in the flours, baking powder, pumpkin pie spice and salt until just combined.
Scoop evenly into the 8 lined muffin cups and bake at 375 F for 20-25 minutes or until a toothpick inserted comes out clean. Serve warm with a little butter or some honey!
