While I almost exclusively make hearty bread with whole grain flour, this bread is my guilty pleasure. I found the recipe in a Taste of Home cookbook and it’s pretty much my favorite bread toasted with jam, honey, or just butter. It nearly melts in your mouth!
In small saucepan, heat 1 cup water to boiling. Stir in oats, butter, honey and salt. Let stand until mixture cools to 110 to 115 degrees F, stirring occasionally. Heat remaining cup of water to 110 to 115 degrees F.
In a large mixing bowl, dissolve yeast in the warm water. Add the egg, oat mixture, and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a stiff dough.
Spread batter evenly in two greased loaf pans (I usually use one large and one small loaf pan). Smooth tops of loaves. Cover and let rise in a warm place until doubled, about 35 to 40 minutes. Bake at 375F for 25 to 35 minutes or until golden brown (internal temp will be around 200F).
Remove from pans to wire racks to cool.

WOW! I LOVE this bread!!! I just took it out of the oven and had to have a piece. I’ve eaten 3 pieces and I’m ready to go back for more. My 2 year old loves it as well.

Great recipe. I substituted whole wheat flour for half of the total amount of flour. The kids loved it.

Delicious bread!!! Fabulous gift to bake and give away with some yummy jam/good honey. Can’t wait to make this bread again!
