Description

A light and whole grain banana muffin meets the rich decadent swirls of chocolate and hazelnut, all for 160 calories.

Ingredients

  • 1 cup White Whole Wheat Flour
  • 1 cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¼ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 3 whole Medium-sized Bananas (Over-ripe, Peeled, Mashed)
  • 2 Tablespoons Butter, Melted
  • ½ cups Brown Sugar
  • ¾ cups Plain Nonfat Yogurt
  • ¼ cups 2% Milk
  • 1 whole Egg
  • ½ cups Nutella

Preparation

Preheat oven to 350 F.

Combine your flours, baking soda, salt and cinnamon in a medium sized mixing bowl.

In a separate bowl, mash the heck out of the bananas. (It’s very important that the bananas are extremely ripe. Basically they need to be too brown to eat. The riper your bananas, the sweeter the muffins will be.) Add the melted butter, sugar, yogurt, milk and egg to the mashed banana and mix well. Pour the wet banana mixture into the dry ingredients and gently stir. Do not over-mix or your muffins will be dense and chewy.

Grab a small glass and put a small zip bag in it like a liner. Spoon the Nutella into it. This is by far the easiest and cleanest way to do this. Squeeze out the extra air and zip the bag. Snip a tiny corner off the bottom.

Put paper liners into your muffin tins (you’ll need two 12-count standard size muffin tins but you’ll only use 17 of the cups). Spoon about a tablespoon of muffin batter into each liner. Squeeze about a teaspoon of Nutella on top of this first layer. This will make for a lovely creamy center in each muffin. Taking the remainder muffin batter, fill the rest of the muffin cups. Use the rest of the Nutella and squeeze a bit on the top of each muffin, then take a toothpick and make those pretty little swirls.

Bake for approximately 18 minutes. The baking time will vary depending on how big you made your muffins, but please don’t over-bake!

There you have it. Healthy (well as healthy as a Nutella swirled anything can be), so easy, so quick and so yummy! Go make some new best friends.

This recipe looks great! I actually tried something like this a while back, and this just brought back so many nostalgic memories, haha! I love cooking stuff like this. Anyways, thanks for posting this dish, I really need to make this more often!
