As a Texas girl I love my cornbread and I love it sweet. This is my Grandmother’s recipe that I grew up eating. To this day it is the cornbread I compare all others to. I also think it may be one of the reasons my husband married me!
1. Preheat oven to 400 F and grease an 8-inch square pan.
2. Beat together egg, buttermilk and oil. I just do it by hand with a fork because that’s how I was taught.
3. In a separate bowl mix together sugar, baking powder, salt, flour and cornmeal.
4. Add wet ingredients to dry and mix together.
5. Pour into the baking dish and bake for 30 minutes.
6. Try not to lick the bowl clean!
This recipe makes about 9 pieces but can easily be doubled if you need more (which we normally do!).
